Grain-Free, Vegan Cauliflower Flat Bread
Avocado with a twist of lemon juice served on a bed of cauliflower is a delightful combo.
It's also a super healthy sandwich, especially if you follow a clean diet, a low carb diet, or have digestive issues.
It's a three-ingredients-only bread. The main ingredient is cauliflower, one of the potent cruciferous vegetables that provides cancer-protecting effects (1) and healthy estrogen metabolism (2) for hormone balance.
I found this cauliflower bread recipe on The Clean Program.
I will say, though, that on its own, the bread is a little bland - taste-wise, so you might want to make it with some broth instead of plain water.

Ingredients
For the bread:
1 pound (4 cups) frozen readymade cauliflower rice or cauliflower florets
3 tablespoons ground chia seeds (divided)
3 tablespoons water
1/2 cup almond meal
Large pinch of Himalayan salt
For the topping:
1 avocado
1 tbsp freshly squeezed lemon juice
Large handful arugula washed
1/8 onion, thinly sliced
Directions
Preheat the oven to 200Ā°C /400Ā°F
Line a baking sheet with parchment paper.
How to make the cauliflower rice: Place the cauliflower florets in a food processor, and pulse until it has a rice-like texture.
Pour the cauliflower into a large pot, add water to cover, and bring to a boil.
Cover, reduce the heat, and allow to cook for about 5 minutes.
While the cauliflower boils, make a chia "egg" by mixing 2 tablespoons of ground chia with 3 tablespoons of water.
Set aside and allow the mixture to thicken.
Drain the liquid and allow the cauliflower to cool for a few minutes.
Transfer cauliflower into a nut milk bag. Or you can use your thinnest teatowel.
Then squeeze the cauliflower to drain all of the excess moisture out. Make sure to put in the time here; it's an essential step!
In a large bowl, mix together the cauliflower rice, chia "egg," almond meal, the additional tablespoon of ground chia seeds, and salt until the mixture makes a well-formed dough.
Place dough on parchment paper and use hands or spoon to flatten to 1/4-inch thick.
Place in oven and cook for 30 minutes or until golden and crispy. Cooking time will vary depending on the thickness of the flatbread. Keep an eye on it, so it doesn't burn.
Remove from oven, and allow to cool.
The Avocado Topping
Mash the avocado with lemon juice.
Cut the cauliflower bread into four pieces.
Spread with a generous serving of avocado and top with arugula and onion.
