LCHF pancakes with almond flour & cheese

These pancakes will keep you satiated your energy high most of the day.

You can serve them hot with some butter or lemon, or store them for snacking throughout the week. 

Prep+cook time: 20 min.

Serves: 9 little fat pancakes

Ingredients

  • 1 tbsp. Psyllium husks

  • 1.7 oz. water

  • 7 oz. grated cheese or cream cheese (I use goat cheese)

  • 1 tsp. baking soda

  • 4 eggs

  • 10 oz. almond flour

  • 2 tablespoons butter (room temperature)

  • Butter for cooking

Instructions

  1. Soak Psyllium husks in the water for 15 minutes.

  2. Combine all the ingredients in a large mixing bowl cream cheese, butter and eggs.

  3. Use whisking hooks or food processor to mix the batter until it has a texture like porridge.

  4. Heat a skillet on 3/4 heat and melt 1 tsp. butter.

  5. Pour 1.7 oz / 0.2 cup pancake batter in the middle of your skillet and cook for 2 minutes on each side.

  6. Enjoy!
